# What you'll need:

→ Beef

01 - 12 oz flank steak, thinly sliced against the grain
02 - 1 tbsp soy sauce
03 - 1 tsp cornstarch
04 - 1/2 tsp freshly ground black pepper

→ Vegetables

05 - 10 oz broccoli florets
06 - 1 medium carrot, julienned
07 - 2 spring onions, sliced
08 - 2 cloves garlic, minced
09 - 1 tbsp fresh ginger, minced

→ Noodles

10 - 10 oz lo mein or egg noodles

→ Sauce

11 - 3 tbsp soy sauce
12 - 2 tbsp oyster sauce
13 - 1 tbsp hoisin sauce
14 - 1 tbsp toasted sesame oil
15 - 1 tbsp rice vinegar
16 - 1 tbsp brown sugar
17 - 2 tbsp water

→ Garnish

18 - 2 tbsp toasted sesame seeds
19 - Extra sliced spring onions (optional)

# Method:

01 - Combine sliced flank steak with 1 tablespoon soy sauce, cornstarch, and black pepper in a bowl. Let rest for 10 minutes.
02 - Whisk together soy sauce, oyster sauce, hoisin sauce, toasted sesame oil, rice vinegar, brown sugar, and water in a small bowl. Set aside.
03 - Prepare lo mein noodles according to package directions. Drain, rinse briefly under cold water, and set aside.
04 - Heat a large wok or deep skillet over medium-high heat. Add sesame seeds and toast, stirring constantly, until golden and aromatic, about 2 to 3 minutes. Remove and reserve for garnish.
05 - Add 1 tablespoon neutral oil to the hot wok. Stir-fry marinated beef for 2 to 3 minutes until just browned. Transfer to a plate and set aside.
06 - Add additional 1 tablespoon oil if needed. Stir-fry garlic and ginger until fragrant, approximately 30 seconds. Add broccoli florets and julienned carrot, stir-frying 3 to 4 minutes until crisp-tender.
07 - Return cooked beef to the wok along with drained noodles. Pour sauce over and toss thoroughly to coat and heat through, about 2 minutes.
08 - Stir in sliced spring onions. Remove from heat and serve immediately, garnished with toasted sesame seeds and extra spring onions as desired.

# Expert Tips:

01 -
  • Everything comes together in one pan, so cleanup is mercifully quick even on weeknights.
  • The sauce clings to every noodle and piece of beef without being heavy or greasy.
  • Toasting the sesame seeds yourself makes the whole kitchen smell like a restaurant you want to visit.
02 -
  • Do not walk away when toasting sesame seeds, they go from perfect to scorched in seconds.
  • Rinse the noodles after cooking or they will stick together in one giant clump when you try to toss them.
  • Slice the beef as thin as you can and always against the grain, otherwise it will be chewy no matter how well you cook it.
03 -
  • Let your wok get really hot before adding anything, that's what gives you the slightly charred edges that taste like restaurant cooking.
  • Prep everything before you start cooking because once the heat is on, this recipe moves fast and there's no time to chop.
  • Use a neutral oil like vegetable or grapeseed for stir-frying and save the sesame oil for the sauce where you can actually taste it.
