Juicy Blueberry Grilled Cheese (Printer-friendly)

Buttered brioche filled with cream cheese, mozzarella and honeyed blueberries, toasted until golden and melty.

# What you'll need:

→ Bread & Spreads

01 - 4 slices brioche or country bread
02 - 2 tablespoons unsalted butter, softened

→ Cheese & Fillings

03 - 4 ounces cream cheese, softened
04 - 3.5 ounces shredded mozzarella cheese
05 - 2.8 ounces fresh blueberries
06 - 1 tablespoon honey or maple syrup
07 - Zest of 1/2 lemon (optional)

# Method:

01 - In a small mixing bowl, gently combine the fresh blueberries with honey and optional lemon zest.
02 - Evenly spread softened cream cheese on one side of each slice of bread using a butter knife.
03 - Distribute the shredded mozzarella evenly over half of the slices, on top of the cream cheese layer.
04 - Spoon the blueberry mixture onto the mozzarella layer and top each with a remaining bread slice, cream cheese side down, forming sandwiches.
05 - Spread softened butter on the outer sides of each sandwich for golden toasting.
06 - Heat a nonstick skillet over medium heat. Place sandwiches in the skillet and toast for 3–4 minutes per side, pressing gently, until the bread is golden and the cheese has melted.
07 - Remove sandwiches from the skillet, let cool briefly, slice in half, and serve warm.

# Expert Tips:

01 -
  • The first ooze of cheese and blueberry feels like a culinary secret only a few are in on.
  • It’s quick enough for a weekday lunch yet impressive enough to wow anyone who wanders into your kitchen.
02 -
  • Don’t rush the skillet—medium heat is your friend, or you’ll burn the bread before the cheese melts.
  • If the blueberries are too cold, they can cool down the cheese filling, so bring them to room temperature for even melting.
03 -
  • Let the sandwiches sit for one minute before slicing to avoid a messy cheese spill.
  • Using a lid during toasting traps heat and melts the cheese faster without burning the bread.
