02 - 2 tbsp olive oil
03 - 1/2 tsp salt
04 - 1/4 tsp black pepper

→ Cheese & Toppings

05 - 1.5 cups shredded sharp cheddar cheese
06 - 6 slices turkey bacon
07 - 2 tbsp chopped green onions
08 - 1/4 cup sour cream

# Method:

01 - Preheat oven to 425°F. Line a baking sheet with parchment paper.
02 - If using fresh potatoes, toss cut fries with olive oil, salt, and pepper. Spread in single layer on baking sheet.
03 - Bake for 25-30 minutes, flipping halfway, until golden and crispy. For frozen fries, follow package instructions.
04 - Cook turkey bacon in skillet over medium heat for 5-7 minutes until crispy. Transfer to paper towel-lined plate and chop into small bits.
05 - Remove fries from oven. Sprinkle with shredded cheddar. Return to oven for 3-5 minutes until melted.
06 - Remove from oven, top with turkey bacon bits and green onions. Serve hot with sour cream on side.

# Expert Tips:

01 -
  • The homemade fries get impossibly crispy without deep frying
  • Turkey bacon brings all the savory crunch with less guilt
  • Everything comes together in under an hour for last-minute crowds
02 -
  • Crowded fries steam instead of crisp. Give them space on that baking sheet.
  • The cheese needs the residual heat from the fries to melt properly. Work quickly.
  • Turkey bacon keeps cooking after you remove it from the pan. Take it off a shade before you think it's done.
03 -
  • Cut your fries uniformly so they all finish cooking at the same time
  • Let the cooked fries sit for 2 minutes before adding cheese, or the cheese slides right off
